Chapter 1
A Dream for Sarita
In 1992, Gerardo and Carolina González made a decision that would change their lives — and Houston's breakfast scene — forever. With a singular goal in mind — funding their daughter Sarita's university education — they opened a small taqueria with little more than a three-compartment steam table and three items on the menu: asado de puerco, chicharrón, and beans.
The early years were physically demanding. The original building had no air conditioning in the sweltering Houston heat. Gerardo and Carolina would end every shift with their shirts soaked in sweat. But their loyal customers kept cheering them on — and that was enough to keep going.

Chapter 2
The Legend of the
Chicharrón Dorado
In the beginning, business was slow — sometimes just 5 customers a day. Money was tight, and the owners couldn't afford premium cuts of meat.
Out of necessity, Gerardo took the leftover pork skins (cueritos) from the legs and created something extraordinary: Chicharrón Dorado — golden crispy pork skins, cooked to perfection.
Customers loved it. They came back 3 to 4 times a day, brought their friends and family, and single-handedly saved the business from closing. That happy accident became Sarita's most famous dish.
“Imitated, never duplicated.”

Chapter 3
Un Cachito de México
Gerardo describes Sarita's Taqueria as exactly that — “a little piece of Mexico.” Inspired by the authentic fondas (small family eateries) from back home, every dish carries a story.
The recipes are family heirlooms. Gerardo's roots in Puebla and Carolina's heritage from San Luis Potosí flow together in every salsa, every tortilla, every bite.
The key? Everything is made fresh. Both flour and corn tortillas are handmade on-site every single day. The food is cooked to order. Nothing sits under a heat lamp.

Our Values & What's Next
From day one, Carolina set one unbreakable rule: every customer must be served equally, regardless of appearance or background. That commitment to dignity and respect is woven into everything Sarita's does.
The original dream came true: Sarita graduated from college. She has now returned to manage the administration, ensuring the family legacy continues into the next generation.
What's next? A new drive-through is being installed. Extended hours are planned. And online ordering through ReddyOrder is on the way — so more of Houston can enjoy a little piece of Mexico, every day.
